ONE HEALTH: A Holistic Approach to Sustainable Development
Living healthily, eating mindfully, acting sustainably – the ONE HEALTH initiative at Schule Schloss Salem brings together education, the environment, and wellbeing.

Launched in autumn 2024, the ONE HEALTH initiative at Schule Schloss Salem is founded on the belief that the wellbeing of humans, animals, and ecosystems is inextricably linked. It aligns closely with the United Nations’ Sustainable Development Goals. Through both theoretical and hands-on experiences, the school aims to inspire its students to contribute to a healthier, more sustainable future. We are proud to be supported by valued partners and advisors who are committed to the success of this initiative. These include the Demeter-certified Hofgut Rengoldshausen, a local organic farm, and the Buchinger Wilhelmi clinic, renowned for its focus on health and wellness.

Initially, the initiative focuses on existing projects and activities that already embody the core principles of ONE HEALTH. One such example is the school’s archery course, which not only teaches students concentration and patience, but also deepens their awareness of the natural world around them. The school’s orchards and gardens also play a central role in the initiative. These green spaces serve as living classrooms where students learn about sustainable farming, biodiversity, and the interconnectedness of healthy soil, plants, and people. Each year during the apple harvest, students gather crates of apples, which are pressed into juice and served in the school’s dining halls. In this way, students develop an understanding of where their food comes from and how agricultural practices influence both health and the environment. The gardens themselves embody the principle that human health is closely tied to the health of the soil and the animals that rely on it.

Schule Schloss Salem’s commitment to nutritious, locally sourced food is a cornerstone of its efforts to promote both sustainability and health. By increasingly incorporating organic and seasonal produce into daily meals, the school fosters a food culture that values quality and sustainability over convenience and excess. This approach ensures that students not only receive essential nutrients, but also gain insight into how their food choices impact the planet.

In early February 2025, we were delighted to welcome speaker and food activist Hendrik Haase, who engaged students from Years 7 to 12 in an insightful discussion on the link between food culture and sustainability. His talk sparked lively debate and left a lasting impression on the school community. His reflections on food systems, their sustainability, and the importance of mindful eating challenged students to reflect more deeply on the foods they consume and the environmental consequences of their dietary choices.

The ONE HEALTH initiative exemplifies Schule Schloss Salem’s commitment to holistic education beyond the classroom. By integrating environmental awareness, animal welfare, and human health into both the curriculum and everyday life, students are being equipped to take responsibility in a world where sustainable solutions to social and ecological challenges are increasingly vital. With the support of trusted partners and the enthusiasm of the school community, we aim to make a meaningful contribution to achieving the United Nations’ Sustainable Development Goals.
